1. Is fresh better than frozen, can or jar?

A recent study, carried out by the University of Tilburg on behalf of the Nutrition Centre, once again showed that vegetables from the freezer contain just as many vitamins as fresh vegetables. This is because of the way they are processed. Vegetables, which are frozen for the freezer, go directly from the field to the factory. There, the vegetables are briefly heated and then frozen immediately. Vegetables intended for cans and jars are also processed as quickly as possible. During the preservation of the can or jar (sterilization), more vitamins are lost, because the process is slightly tougher on the vegetables. Therefore, vegetables in cans or jars contain fewer vitamins than fresh or frozen vegetables.
